The list

Around a hundred drinks, rewritten several times a year. Everything below is from the current menu.

How they're built

Fruit, spirit, something natural, ice.

That is the whole method, and it hasn't changed since 2002. Pineapples, bananas, melons and citrus are cut in the bar through the day. Sorbets, purées and syrups — ginger, cinnamon, watermelon, lemongrass — are made in house. Juice is pressed to order.

The base spirits are mostly Caribbean and Latin American rum, vodka, Brazilian cachaça and Mexican tequila, with a long premium gin list served with Fever-Tree and Schweppes Premium tonics. Every cocktail on the list can be made without alcohol, and there is a full virgin section of its own.

Classics are made properly too — if it isn't on the list, ask.
